Okay I am a complete n00b with AEG gearboxes and internals so this will probably be a stupid question: what's the difference between speed and torque in gears/pistons/motors/etc??

get a high speed motor if you want ROF. Torque shouldn't be a big problem unless you put a more powerful spring in.
ROF and trigger response are linked, the faster the ROF, the lower the time between pulling the trigger and the 1st BB exiting the gun.
If you want a better answer start a thread, then you will get the sensible ppl telling you what to do, not just use guys
