I like metal guns and I cannot lie.... Advice for more!

However as far as pistols are concerned I feel you are in for some disappointment. Even Sig, Beretta and CZ are moving over to polymer framed guns. The latest US military sidearm is a polymer framed gun.
I know that the trend is towards polymer for modern weapons.
However, thankfully, that's irrelevant to us as airsofters.
As you say, the 1911 has been around for a while - and is still made and used - it's iconic and I can't see it not being made for airsoft.
Metal guns offer added realism to their polymer counterparts - no matter what new weapons come out - a higher number of current and old models are all metal. A polymer AK? Hell no!
I think the only threat to metal airsoft guns is if people stop buying them.
So I'm going to go the opposite way.

 
Are there any decent CZ75B's worth buying?

I like the metal guns, but I do like the Glocks as well. Would love a nice CZ75B :)

ASG do an all metal one - I believe its their rebranding of the KJW, but with all the trades. Or you can get the KJW one a bit cheaper with no trades.

And KWA also makes a metal one with a plastic outer barrel.

There are reviews of both on Youtube.

I have an Armorer Works Hicapa and have been quite impressed with it so far.

They are very nicely finished, and I was able to get three mags worth of bbs from a single gas fill during the hot weather. You can also buy co2 mags for them, but I am not keen on co2. 

They certainly look nice and have plenty of weight. Lots of kick to the recoil.

The Americans have been very impressed with them. Proprietory parts only but they seem to be widely available.
