Would it be worth spraying this with clear matt plastikote before attachment, in order to stop the sand paper particles from rubbing away too easily.

Would it actually work?

I've not seen this one, is it similar to the talon grips from the USA? If so, probably not. But if more "samdpapery" then that's not a bad idea but if you wear gloves then they'll wear down with use and be quite good I'd imagine. Do u have a link for me to see bud?

It's basically the same as skateboard grip tape so I wouldn't worry about the grit coming off! I'd be more worried about it sanding your palms down. If you spray it with plastikote it'll fill in an amount of the depth of the grit which will somewhat negate the point of it in the first place.
