I know to fit the Leviathan the instructions say you remove some parts like the cutoff lever, but not sure if doing so disables the bolt stop though.

Yes, most gas guns function (and often field strip) much the same as their real counterparts.
Some electric guns function like the real ones, but that's more limited to a charging handle or bolt release operation.
I don't think anyone makes an SA80 that's as unreliable and prone to jamming as...

I have a BCM grip on my short M4 and it has a really rough texture. Great for grip, although i always wear gloves in games, but i imagine it'd be a bit harsh on bare hands.
MP5s are more than capable, even with their short barrels. I have an NGRS MP5 that's only had inner barrel and bucking changed and it does just fine, despite being ~0.8j.
