geneva convetion applies to war, fortunately we only have conflicts these days so not a concern

Common Article 2 states "The Conventions apply to all cases of armed conflict between two or more signatory nations, even in the absence of a declaration of war" so yeah, not just "war".

RE the geneva convention, ISIS is nor a "nation" or a signatory of the geneva convention, so therefore if we were to enter conflict with them surely it wouldn't apply as the conflict isnt between two signatory nations? Or am I reading between the lines too much?

No I wouldn't because there innocent, this is what jihadi john is doing. Alan Henning was an innocent aid worker and he killed him because he wanted the government to stop the air strikes.
