There are some generic stackable cases sold as Combat Games Essentials, Skirmish Tactical and other brands that are good. I’ve bought several from XL (to fit my shottie) though L (M4s) to a pistol case. Stack nicely in the car and don’t go flying around even under extreme cornering.

Baofeng 888 are cheap and cheerful and plenty good to begin with. Can often pick a pack of two up for £20 on Amazon. Accessories are cheap and plentiful. Both of you would need Foundation licenses if you wanted to go the amateur radio route although it's easier than you think these days.
